- Chill. Refrigerate or freeze all perishables, prepared foods, and leftovers within two hours of reaching room temperature. Store raw animal products in leak-proof plastic bags or other containers. If cooked food won't be eaten for several hours after it leaves the house, put something frozen--such as a cold pack or frozen juice--next to it.
